Vegetarian paprikash with amaranth

Amaranth is one of the oldest cultivated plants in the world, and, at the same time, it is one of the leading products with very high nutritional value. It is characterized by high iron concentration, which supports treatment of anaemia and systemic weakness. Remember that meals rich in this element should be supplemented with products containing vitamin C (parsley is enough), which significantly improves absorption of iron. Amaranth is a source of easily digestible protein and, just like quinoa, contains a set of exogenous aminoacids, which means that we must provide them with food. It is easily digestible and soothing, so it is recommended for children, convalescents and sports people. Even the Indians, like centuries ago, chew the amaranth leaves and give them to their babies. This Inca Gold also contains something rare and very valuable. It is squalene, the element of longevity.

In the Himalayas, ground amaranth seeds are used to prepare Chapattis, namely highly nutritious cakes, resembling our pancakes.

Paprikash with amaranth is a great snack during intense days – remember that stress has negative influence on digestion. It not only tastes great by itself, but also with rye bread, spicy pancakes and omelettes.
